Indian Curry with Chicken and Easy Brown Rice

Last post, I mentioned that I would be on a monthly posting schedule until life got more settled. That was in April. Now, it is almost August, and I, as always, have failed to regularly share delicious recipes from our kitchen on the blog world. The truth of the matter is that our kitchen has not produced much more than salads and sandwiches for the last several months! We took on a big adventure of making a cross-country move, which involved selling all of our prized possession (including most of my stocked kitchen), packing what we could fit in our Toyota Avalon, and starting over in North Carolina. A big adventure might be an understatement... Let's call it a colossal life change. That's a story for another day (or days), maybe warranting its own blog. For now, let's get back to the theme of this blog - FOOD.

Food and adventure have gone hand-in-hand in our world. Most recent adventures include cooking with absolutely no equipment, slowly piece-mealing a kitchen back together, and taking on the challenge of cooking as many recipes as possible from the cookbooks that made the travel cut. Prepare yourself for several new recipes from America's Test Kitchen Family Cookbook, America's Test Kitchen Healthy Family Cookbook, and The Essential Best Foods Cookbook. To start, Indian Curry with Chicken and Easy Brown Rice from the Healthy ATK Cookbook!

 
 
This curry was a bit different than we were expecting, but it was absolutely delicious. It was definitely not as spicy as we like, but that can easily be fixed. Very easy to prepare, quick clean up, and makes enough for leftovers! You definitely want to make some rice to go with it, as it is much more soup-like than typical Indian curry. Also, don't skimp on the carbs... treat yourself to some naan - make your own or try Trader Joe's!

Indian Curry with Chicken - America's Test Kitchen Healthy Family Cookbook
Ingredients:
1 (14.5 oz) can whole peeled tomatoes
2 1/2 T. canola oil
4 1/2 tsp. curry powder
1 tsp. garam masala
1 onion, minced
1 jalapeno chile, stemmed, seeded, and minced (we added in the seeds for more heat)
3 garlic cloves, minced
1 T. grated fresh ginger
1 T. tomato paste
1 c. water
1 lb. boneless, skinless chicken breasts (2-3)
1/2 head cauliflower (about 1 lb.), cored and cut into 1-inch florets (about 3 cups)
1 c. frozen peas, thawed
1/2 c. plain whole milk yogurt
1/4 c. minced fresh cilantro
Salt

Directions:

Pulse the tomatoes with their juice in a food processor until no large chunks remain, about 5 pulses; set aside.

Heat the oil in a Dutch oven (or large pot) over medium heat until shimmering. Add the spices and cook for about 30 seconds. Add in the onion and cook for about 5 minutes. Add the jalapeno, garlic, ginger, and tomato paste and cook for 30 seconds more. Stir in the water and tomatoes, then add the chicken and cauliflower. Bring to a simmer for 12-18 minutes, or until the chicken is cooked through, flipping the chicken halfway through. Transfer the chicken to a carving board and shred into bite-sized pieces.

Put the shredded chicken and any accumulated juices back into the pot, then add the peas and simmer until heated through (about 2 minutes). Off the heat, stir in the yogurt and cilantro. Season with salt to taste and serve with Easy Baked Brown Rice and extra plain yogurt.

Easy Baked Brown Rice - America's Test Kitchen Healthy Family Cookbook

Ingredients:
1 T. olive oil
1 small onion, minced
Salt and pepper
2 1/4 c. water
1 c. low-sodium chicken broth
1 1/2 c. long-grain brown rice, rinsed and drained

Directions:

Preheat oven to 375 degrees. Heat the oil in a Dutch oven over medium heat until shimmering. Add the onion and 1/4 tsp salt and cook, stirring occasionally, until well browned, 12-14 minutes. (NOTE: I know this seems like a really long time to cook onions, but it really does make the dish very flavorful!)

Add the water and broth, cover, and bring to a boil. Off the heat, stir in the rice. Cover and bake until the rice is tender, 65 to 70 minutes.

Remove the pot from the oven, uncover, and fluff the rice with a fork, scraping up any rice that stuck to the bottom. Lay a clean folder kitchen towel underneath the lid. Let sit for 10 minutes. Season with salt and pepper to taste.

Tuscan Beef Stew with Polenta

I haven't been to Italy yet, but I imagine this dish from America's Test Kitchen brings me as close to the tastes and scents as I will get. Usually, I love stews that are chock full of vegetables, so I was a little leary of this being just beef. I was pleasantly surprised by the final product! The flavor pairings and the aroma filling your house as it simmers are incredible. Enjoy!



Tuscan Beef Stew
From Cooks Illustrated Magazine: January & February 2015 issue

Ingredients:

4 lbs. boneless beef short ribs (or a 5 lb chuck roast), trimmed and cut into 2-inch pieces
1 T. vegetable oil
1 (750-ml) bottle Chianti
1 cup water
4 shallots, peeled and halved lengthwise
2 carrots, peeled and halved lengthwise
1 garlic head, cloves separated, unpeeled, and crushed
4 sprigs fresh rosemary
2 bay leaves
1 T. cracked black peppercorns, plus extra for serving
1 T. unflavored gelatin
1 T. tomato paste
1 tsp. anchovy paste (I left this out and I think it turned out just fine!)
2 tsp. ground black pepper
2 tsp. cornstarch

Directions:

Toss beef and 1 1/2 tsp. salt together in a bowl and let stand at room temperature for 30 minutes. Adjust oven rack to lower-middle position and heat oven to 300 degrees.

Hear oil in a large Dutch oven over medium-high heat until just smoking. Add half of the beef in a single layer and cook until well browned on all sides, about 8 minutes total, reducing heat if fond begins to burn. Stir in 2 cups wine, water, shallots, carrots, garlic, rosemary, bay leaves, cracked peppercorns, gelatin, tomato paste, anchovy paste, and remaining beef. Bring to simmer and cover tightly with sheet of heavy-duty aluminum foil, then lid. Transfer to oven and cook until beef is tender, 2 to 2 1/4 hours, stirring halfway through cooking time.

Using slotted spoon, transfer beef to bowl; cover tightly with foil and set aside. Strain sauce through fine-mesh strainer into fat separator. Wipe out pot with paper towels. Let liquid settle for 5 minutes, then return defatted liquid to pot.

Add 1 cup wine and ground black pepper and bring mixture to boil over medium-high heat. Simmer briskly, stirring occasionally, until sauce is thickened to consistency of heavy cream, 12 to 15 minutes.

Combine remaining wine and cornstarch in small bowl. reduce heat to medium-low, return beef to pot, and stir in cornstarch-wine mixture. Cover and simmer until just heated through, 5 to 8 minutes. Season with salt to taste. Serve with polenta or crusty bread.

Creamy Polenta
From America's Test Kitchen Healthy Family Cookbook

Ingredients:
4 c. water
Salt and Pepper
1 c. coarse-ground polenta
1 1/2 T. unsalted butter, cut into pieces
1/2 c. grated Parmesan cheese

Directions:

Bring the water and 1/2 tsp salt to a boil in a large heavy-bottomed saucepan. Following the photo, slowly add the polenta while stirring constantly in a circular motion to prevent clumping. Bring to a simmer, stirring constantly.

Cover and reduce the heat to low. Cook, stirring often and vigorously (make sure to scrape the corners of the pot), until the polenta becomes soft and smooth, 10 to 20 minutes.

Stir in the butter and 6 tablespoons of the Parmesan. Season with salt and pepper to taste. Sprinkle with the remaining 2 tablespoons Parmesan before serving.

Easy Superbowl Feast {Chips & Dip, Chili & Cornbread}

Even though Mac's Seahawks lost in the final minute, we had a blast watching the Superbowl this year! I absolutely love having friends in our home, especially when it involves 4 toddlers scooting/crawling/running around. I love any opportunity I can get to make good food, eat it, and share it with others. We used simple recipes that can be prepped ahead of time to compile a homemade spread of deliciousness. I stuck with my favorite go-to's to ensure the least amount of stress. We had guests bring their own beverages to chip in. All the recipes can be found right here on the blog, minus the cornbread (which I'll share here).

The Menu:
The Game Plan:
  • Sometime the week before (or up to a month before): make the sugar cookies and freeze.
  • The day before:
    • Make the Spinach Artichoke dip up to the last step. 
    • Cornbread!
    • Assemble the chili.
    • Bake the brownies. Lick the bowl.
    • Wash the dishes as you go - you'll thank yourself later!
  • Game day:
    • Pull the cookies out of the freezer in the morning, and they're good as new!
    • Have your significant other make the 7-layer dip - save him/her some time and dishes by buying shredded cheese and sliced olives. 
    • Allow the spinach artichoke dip to sit at room temperature for about 30 minutes, then bake at 375 for 15-20 minutes right before serving.
    • Turn the oven off and let the cornbread warm in it.
    • Reheat the chili on med-low when the game starts - it'll be ready at halftime.
    • Assemble your fruit and veggie tray (blueberries, grapes, orange slices, sliced bell pepper, celery, english cucumber, and baby carrots).
    • (Notice there are hardly any dishes to do today!)
    • Eat with your friends, instead of slaving away in the kitchen during the game!

You, of course, can prep everything the morning of the gathering; everything is very simple to assemble - the waiting is the hardest part. Whatever you prefer, this spread took very little effort to make, it was fairly inexpensive (I think the grocery bill was around $55), it all turned out great, and it fed 9 adults with about a week's worth of leftovers. Also, it helps if you only have to go to the store once...unlike me, who tends to forget at least one thing even with a list. To help you avoid my mistakes, you will find a grocery list of everything you'll need to make our Superbowl Feast right after the cornbread recipe!


Northern Cornbread
from America's Test Kitchen Menu Cookbook

Ingredients:

2 1/4 c. all-purpose flour
1 1/2 c. yellow cornmeal
2 1/2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
1 1/2 c. buttermilk
1 c. frozen corn kernels, thawed
6 T. packed light brown sugar
3 large eggs
12 T. unsalted butter, melted and cooled

Directions:

Adjust oven rack to middle position and heat oven to 400 degrees. Line 13 by 9-inch baking pan with aluminum foil sling and grease foil (I just used my stoneware pan without foil).

Whisk flour, cornmeal, baking powder, baking soda, and salt together in a medium bowl. Process buttermilk, corn, and brown sugar in a food processor until combined, about 5 seconds. Add the eggs and continue to process until well combined (some corn lumps will remain), about 5 seconds. Fold buttermilk mixture into flour mixture with a rubber spatula. Fold in melted butter until just incorporated (do not overmix).

Scrape batter into prepared pan and smooth top. Bake until golden brown and a toothpick inserted in the center comes out clean, 25 to 35 minutes, rotating pan halfway through baking. Let the cornbread cool in the pan for 10 minutes, then remove from the pan using the sling and let cool on a wire rack for 20 minutes. Serve warm or at room temperature.

    • 3 large, ripe avocados
    • 1 lime
    • 1 red onion
    • 2 yellow onions
    • 1 red bell pepper
    • 4 roma tomatoes
    • 2 heads of garlic
    • 1 bunch fresh cilantro
    • 1 Jalapeno (optional)
    • 1 10 oz. baby spinach
    • 1 c. frozen corn
    • Desired produce for your fruit and veggie tray (see above for my choices)
  • Pantry
    • Salt
    • Pepper
    • Cayenne Pepper
    • Chili powder
    • Cumin
    • Vegetable oil
    • 1 pkg. powdered sugar
    • Vanilla extract
    • All-purpose flour (7 1/4 cups total)
    • Yellow cornmeal
    • Baking Powder
    • Baking Soda
    • Cream of tartar
    • White Sugar
    • Brown Sugar
  • Meat
    • 2 lbs. ground beef (85% lean to help with the moisture)
  • Dairy
    • 6 large eggs 
    • 16 oz. sour cream (you only need 8 oz., but you can use the extra for the chili)
    • 1 pkg. shredded Colby Jack cheese
    • 2 - 1 lb. pkgs. butter 
    • 1.5 c. whole milk
    • 1.5 c. buttermilk (or add vinegar/lemon juice to the quart of whole milk you just bought)
    • 2 - 8 oz. pkgs. cream cheese
    • 1/2 c. feta cheese
    • 1/2 c. parmesan cheese
    • 3/4 c. pepper jack cheese  
    • Cheddar cheese to serve with the chili
    • Ranch or other dip for the veggie tray
  • Canned Goods
    • 1 can refried Beans (or 2 cups dry pinto beans)
    • 1 can sliced black olives 
    • 1 (28 oz) can tomato puree
    • 1 (28 oz) can diced tomatoes
    • 2 (15.5 oz) cans red kidney beans
    • 2 (15 oz) cans artichoke hearts
    • 1 box Ghiradeli brownie mix
  • Snacks
    • French baguette (to serve with the spinach artichoke dip)
    • Tortilla chips
    • Skittles

Extraordinary Steamed Artichokes


Do these green bulb, prickly leaf things scare you? I have to admit, artichokes are a bit intimidating.  My family didn't ever buy them growing up, and I wasn't quite sure how you cook them, much less how you eat them.  The unknown is a foreign land to me, one that I quickly avoid whenever possible.  Artichokes fall in that category... I know, I'm a wimp. True statement.

So, what inspired me to pick up this little guy in the produce section yesterday? For one, we make a significant effort to eat fruits and veggies that are in season and on sale.  That, in combination with prepping the hubby's simplistic, but fancy birthday dinner, helped this unique veggie hop right into my shopping cart.  It's so exquisite!

The best surprise about my artichoke experience is how easy it was to prepare! I was worried that just having a plain old steamed artichoke would be bland.  Turns out, Tyler Florence on the Food Network knows how to break out the flavor in a super easy way! We served with melted butter mixed with lemon juice, but we didn't even need it.  One artichoke was more than enough for the two of us, and we still had left overs.  I'm going to eating a lot more of these, for sure!

Ingredients:

4 Sprigs fresh parsley
4 garlic cloves, peeled and whole
2 bay leaves
2 lemons, halved
1/4 c. white wine
2 Tbsp. olive oil
1 quart chicken broth or water (I used water)
Salt and Pepper
2 whole artichokes (I just cooked one)


Directions

1. Put the parsley, garlic, bay leaves, lemons, wine, oil and broth in a large pot and bring to a simmer. Season the liquid with salt and pepper. In the meantime prepare the artichokes.

2. Wash artichokes under cold water. Using a heavy stainless steel knife, cut off the stems close to the base. Pull off the lower petals that are small and tough. Cut off the top inch of the artichoke and rub with half a lemon to preserve the green color. Alternatively, you may put the artichokes in acidulated water. If you wish, trim the thorny tips of the petals with kitchen shears.

3. Place the artichokes in the steaming liquid, bottom up. Cover and simmer for about 30 minutes. The artichokes are done when a knife is inserted into the base and there is no resistance.

Spinach-Artichoke Dip

The Pioneer Woman is a genius. Absolute genius.  She has discovered the secret to a happy appetite: quit counting calories and just eat what's delicious.

It's true. This Spinach-Artichoke Dip is to die for (Pioneer Woman lovingly titles it "The Best Spinach Artichoke Dip Ever" and it deserves every word of that title)! I served this at a baby shower this weekend and it was definitely the star of the buffet table.  It's delicious on chips, french bread, baguettes, pita bread, a spoon, your finger... So good.

Ingredients:
6 Tbsp. butter
3 cloves garlic, minced
1 (10 oz) bag of Spinach
2 can artichoke hearts, drained
3 Tbsp. flour
1 1/2 cup whole milk
1 (8 oz) pkg cream cheese, softened
1/2 c. feta cheese
1/2 c. parmesan cheese, grated
3/4 c. pepper jack cheese, grated
1/4 tsp. cayenne

Directions:

1. Melt 3 tablespoons of butter in a skillet over medium heat.  Add garlic and cook until fragrant.  Increase the heat to medium-high and add the spinach.  Cook, stirring often, until the spinach wilts.  Remove the spinach from the skillet and put in a small strainer.  Squeeze the excess juice back into the skillet and set spinach aside.

2. Add the artichokes to the now-empty skillet and cook over medium-high heat for several minutes, until liquid is cooked off. Remove from the pan and chop up with the spinach.

3. In the same skillet, melt the remaining tablespoons of butter and whisk in the flour until it makes a paste.  Cook over medium-low heat for 1 to 2 minutes, then slowly whisk in the milk.  Stir and cook until slightly thickened.

4. Add remaining ingredients and stir until the cheeses are all melty and the sauce is smooth.  Add in the chopped artichokes and spinach and stir to combine.

5. Pour the dip into a shallow baking dish. Top with additional grated pepper jack and bake at 375 degrees for 15 minutes, or until the cheese is melted and bubbly.

Whole-Wheat Dinner Rolls

Happy Thanksgiving! I hope everyone had a wonderful time spending time with family; I know I did!

I made two types of rolls this year, and I thought for sure that The Pioneer Woman no-knead rolls would surely win out.  I was wrong. These rolls from my Healthy America's Test Kitchen Cookbook were the winner by a landslide, even the baby cousins loved them! They're fairly simple to make and turn out so light and fluffy.  Next year I better make more!

Ingredients:

1 1/2 cups warm buttermilk (110 degrees)
5 Tablespoons butter, melted and cooled
2 Tablespoons honey
1 large egg
2 1/12 cups whole-wheat flour
1 1/2 - 2 cups all-purpose flour
1 Tablespoon instant or rapid-rise yeast
2 tsp salt

Directions:

1. Whisk the milk, butter, honey, and egg together in a liquid measuring cup.  Combine the whole-wheat flour, 1/12 cups of the white flour, yeas, and salt in a standing mixer fitted with the dough hook.  With the mixed on low speed, add the milk mixture and mix until the dough comes together, about 2 minutes.

2. Increase the mixer speed to medium-low and knead until the dough is smooth and elastic, about 8 minutes.  If after 4 minutes more flour is needed, add the remaining 1/2 cup of flour, 2 tablespoons at a time, until the dough clears the sides of the bowl but sticks to the bottom.

3.  Turn the dough out onto a lightly floured surface and knead by hand to form a smooth round ball.  Place the dough in a large, lightly greased bowl and cover with greased plastic wrap.  Let rise in a warm place until doubled in size 1 to 1/2 hours. 

4. Line a rimmed baking sheet with parchment paper.  Turn the dough out onto a lightly floured surface, gently press it into a 10-inch square, then cut it into 16 equal pieces.  Working with one piece of dough at a time (keep the remaining pieces covered with a towel), round the dough into smooth, taut rolls and lay them in two slightly staggered rows on the prepared baking sheet. (The rolls should be close together.  They will rise into each other to create pull-apart rolls, which prevents them from getting dry and crusty).

5. Spray the rolls lightly with vegetable oil spray and cover loosely with plastic wrap and let rise in a warm place until they have nearly doubled in size, 45-75 minutes. 

6. Preheat an oven to 425.  If you have a baking stone, put it in the oven while it heats up and let heat for 30 minutes.

7. After the rolls have risen, place them in the oven (the rimmed baking sheet directly on the baking stone), and immediately reduce the heat to 400 degrees.  Bake until the rolls are golden, 12 to 15 minutes. Let cool on a wire rack for at least 30 minutes before serving.

Quinoa with Corn and Pecans


One of my absolute favorite features of the Best Foods Cookbook is the unique pairings of ingredients. I never would have thought to put pecans, corn, and BACON in quinoa.  I'm so thankful for creative, innovative minds such as Dana Jacobi (author of the cookbook)!  This was so quick and simple to make. Enjoy!

Ingredients:
3 tsp. canola oil, divided
1 strip bacon, finely chopped
1 small red onion, finely chopped
2 cups cooked quinoa (recipe calls for red quinoa, but as you can see, I used standard quinoa)
3/4 cup frozen yellow corn kernels
1/2 cup fat-free, reduced-sodium chicken broth
1 1/2 tsp apple cider vinegar
Salt and freshly ground pepper
1/3 cup chopped pecans

Directions:

1. In a medium saucepan, heat 2 teaspoons of the oil over medium high heat.  Add the bacon and cook, stirring, until it colors, 2 minutes. Remove with a slotted spoon and set aside.

2. Add the remaining 1 tsp oil to the pot.  Mix in the onion and cook, stirring often, until it is golden, 4 minutes. Add the quinoa, corn, broth, and cooked bacon.  Cook, stirring, until the pilaf is heated through, 3 minutes.  Off the heat, mix in the vinegar and season to taste with salt and pepper.  Transfer to a serving bowl and sprinkle on the pecans.

Mexican Mole Chicken Salad

Ingredients:

1 tbsp. natural unsweetened cocoa powder
2 tsp. curry powder
1 tsp. sweet/hot Hungarian paprika
1/2 tsp. ground coriander
1 tsp. salt
1/4 tsp. freshly ground pepper
4 (4 ounce) pieces boneless, skinless chicken breast
8 cups loosely packed spinach
1 Granny Smith apple, halved and tinly sliced lengthwise
1 green bell pepper, cut into 1/4" strips
1 small red onion, cut into thin rings
4 tbsp. raisins
4 tbsp. slivered almonds, toasted

1/3 c. Spiced Buttermilk Dressing

Directions:

Preheat the oven to 350 degrees.  On a small plate, combine the cocoa, curry powder, paprika, coriander, salt and pepper. One at a time, dredge the chicken pieces int he seasoning, coating them all over liberally, then place on a baking sheet.  Bake the chicken until a thermometer inserted in the center registers 165 degrees and the juices run clear, about 20 minutes.  Set the chicken aside to cool until lukewarm or room temperature.

In each of 4 wide shallow salad bowls, make a bed of the spinach.  Add the apple, then the green pepper strips. Cut each chicken breast across the grain into 1/4" diagonal slices and arrange on top of each salad.  Add the onion rings, raising, and almonds.  Serve with dressing.

Spiced Buttermilk Dressing:

2/3 c. regular or light buttermilk
1 tbsp. fresh lime juice
1 tsp. canola oil
1 clove garlic, minced
1/2 tsp. ground cumin
1 tsp. salt
1/4 tsp. pepper

Whisk together all ingredients.  Set aside for up to 4 hours.

Green and Yellow Squash Ribbons

Lovely dinner.

Ingredients:
2 large (9 ounce) zucchini
2 large (6 ounce) yellow squash
1 Tbsp. extra-virgin olive oil
2 tsp. minced shallot
Salt and Pepper
2 tsp. basil, cut in fine ribbons
2 tsp finely chopped oregano leaves

Directions:

To make long thin ribbons, halve each squash lengthwise.  Using a teaspoon, scoop out the seeds.  Cut off the neck and rounded blossom end, then slice the squash lengthwise into 1/5" strips.  Discard the outermost ones that are mainly skin.

In a medium skillet, heat the oil over medium heat.  Add the shallot and cook until soft, 1 minute.  Add the squash and sprinkle with salt.  Cook, stirring occasionally, until the squash looks moist, 3 minutes.  Increase the heat to medium-high and cook, stirring constantly, until tender, 8 minutes.  THe pieces should bend easily but still be tender-crisp.

Using tongs, remove the squash to a serving plate.  Spoon the shallots from the pan over the squash and season with salt and pepper to taste.  Sprinkle on the basil and oregano and serve immediately.

Surprise Success!

What a spread.



Last weekend, we hosted a surprise 30th anniversary party for my parents.  It was a HUGE success.  Over 30 people came and honored the happy couple, and to top it off, Mom and Dad had no idea that we had this planned! I served brunch theme food, including Bacon Quiche Tarts and Quiche Lorraine Muffins.  I know it looks like a lot of work, but there are two tricks: 1. Bake almost everything on a free day and freeze.  2. Don't be afraid of store-bought delights.

Besides the recipes mentioned above, we also had:

  • Whole Wheat Banana Bread
  • Ham & Cheese Bake
  • Veggie Dip
  • Fruit Dip
  • Brownies (from a Ghiradeli box)
  • Costco-bought Cinnamon Rolls (Mac almost likes them better than my homemade ones!)
  • Aunty Christy's Cinnamon Muffins
The dips were delicious and easy to make; an easy must-have for any gathering.

Fruit Dip:

Cream together 1-(8 oz) package of cream cheese (softened) and 1 jar of marshmallow creme.  Simple as that.

Lemon-Dill Veggie Dip:
Ingredients:
3/4 c. mayonnaise (I usually avoid mayo at all costs, but it's hard to make a creamy dip without it)
3/4 c. sour cream
4 T. fresh lemon juice
4 oz. crumbled feta
2 T. fresh dill
Salt and Pepper

Mix all of the ingredients well. Again, simple as that.

Bacon Quiche Tartlets


It was brunch week at our house. Also, muffin week.  Brunch because bacon is delicious; muffin because my new pampered chef tins are my current obsession.  Make these. Eat them. Don't judge me for using store bought crescent rolls.

Ingredients:

6 oz. cream cheese, softened
5 tsp. milk
2 eggs
1/2 c. shredded Colby cheese
2 T. chopped green pepper
1 T. finely chopped onion
1 tube refrigerated crescent rolls
5 bacon strips, cooked and crumbled

*I did TRIPLE this recipe to make 24 tarts, but that was because I needed them for a party... you can make however many you'll eat (which will probably be all 24).

Directions:

1.  In a small mixing bowl, beat cream cheese and milk until smooth.  Add the eggs, cheese, green pepper and onion; mix well.

2. Separate dough into eight triangles; press onto the bottom and up the sides of greased muffin cups.  Sprinkle half of the bacon into cups.  Pour egg mixture over bacon; top with remaining bacon.

3.  Bake uncovered at 375 for 18-22 minutes or until a knife comes out clean.  Serve warm.

Quiche Lorraine Muffins

I have a new pampered chef muffin tin that has been begging me to make something delicious in it.  I'm feeling a little sugar-overloaded, so I went for a savory muffin.  These were fairly simple to make and have quite a few variations - I made them with mushrooms rather than bacon (only because I made another quiche dish with lots of bacon).  Enjoy!


Ingredients:
1/4 c. canola/vegetable oil
6 strips bacon, roughly chopped (I substituted 1 1/2 c. thinly sliced mushrooms)
4 medium scallions, thinly sliced
2 c. all-purpose flour
1/2 c. yellow or white cornmeal
1 T. baking powder
1 T. sugar
1/2 tsp. salt
1 large egg, room temperature
2 large egg yolks, room temperature
1 c. whole milk
1 1/4 c. shredded Gruyere (5 oz) (This is pretty spendy... I read a lot of reviews that said you can sub swiss cheese for Gruyere and get similar flavor. I used colby jack, and it was a little bland)


Directions:

1. Preheat the oven to 400 degrees and prep your muffin tin (if it's nonstick, don't spray it)

2. Heat a medium skillet over medium heat.  Swirl in 1 T. of the oil, then add the bacon and saute for 1 minute.  Add the scallions and cook for 2 minutes, stirring occasionally, until the scallions are wilted and the bacon is lightly browned.  Transfer to a large bowl and cool for 10 minutes.  (If using mushrooms, saute mushrooms and scallions for 4 minutes).

3.  Meanwhile, whisk the flour, cornmeal, baking powder, sugar, and salt in a medium bowl util well blended.  Set aside. Whisk the egg, egg yolks, and the remaining oil into the bowl with the bacon.  Stir in the milk and cheese until well incorporated.  Finally, stir in the dry ingredients until moistened.

4.  Fill the tins three-quarters full.  Bake for 18 minutes or until lightly browned and a toothpick inserted in the center of one comes out with a few crumbs attached.


5.  Set the pan on a wire rack to cool for 10 minutes.  They can freeze for up to 3 months in the freezer.

Mac's Guacamole


This really isn't MAC's guacamole, but I think of it that way since he is always the one who makes it; and he does a killer job at it, too!  He usually makes this to go in his fantastic 7 layer dip (which I'll give you the 7 layers for at the end of this post).  The guacamole recipe is off of allrecipes.com

Ingredients:

  • 3 avocados - peeled, pitted, and mashed
  • 1 lime, juiced
  • 1 teaspoon salt
  • 1/2 cup diced onion
  • 3 tablespoons chopped fresh cilantro
  • 2 roma (plum) tomatoes, diced
  • 1 teaspoon minced garlic
  • 1 pinch ground cayenne pepper

Directions:

In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.


7 layer dip:

The recipe calls for it to be warmed up, but Mac likes to serve it cold, and everyone likes it that way.  Goes great with the Tostitos scoops!  Just spread each layer in a 9x13 pan and serve.

1 can Refried Beans
8 oz. sour cream
Guacamole (1 recipe)
2 c. Colby Jack cheese, shredded
2-3 Roma tomatoes, diced
1 can sliced black olives
Jalapenos (optional)

Corn and Chicken Soup with Garlic-Cheese Biscuits


I was sick for two weeks.... and while this soup did not help me get better, it was soothing. :) A new, simple twist on chicken noodle soup.

1 (16oz) bag frozen corn, thawed
8 cups low-sodium chicken broth
1 T. unsalted butter
1 onion, chopped (I left it out for my anti-onion friends)
1 celery rib, sliced thin
Salt and Pepper
2 boneless, skinless chicken breasts, cut into 1/2-inch chunks
3 cups egg noodles

Directions:

Combine 2 cups of corn and 2 cups broth in blender and puree until smooth.  Melt the butter in Dutch oven over medium-high heat.  Cook onion, celery, remaining corn, and 1/2 teaspoon salt until softened, 5 to 7 minutes.

Stir in remaining broth, chicken, noodles, and pureed corn mixture.  Bring to a boil, then reduce heat to medium and simmer until noodles are tender and chicken is cooked through, 6 to 8 minutes.  Season with salt and pepper.


Believe it or not, this recipe came off the back of the flour bag! Yum!

Ingredients:
2 1/2 c. self-rising flour
2 tsp. sugar
1/2 c. butter
1 c. buttermilk
3/4 c. cheddar cheese
2 T. butter, melted
1/8 tsp. garlic powder

Directions:

Heat oven to 450 degrees.  Stir together flour and sugar.  Use a pastry blender to cut in 1/2 c. butter until mixture is crumble.  Stir in buttermilk and cheese until dough comes together.  Drop by large spoonfuls onto a cookie sheet and back 10-12 minutes.  After baking, brush with mixture of butter and garlic powder.

Coleslaw

This is the coleslaw that goes with the amazing Pulled Pork.  I love how crisp this stays... adds a nice crunch to the sandwich!

Ingredients:
1 head red or green cabbage (about 2 pounds), cored and sliced thin
Salt and Pepper
2 carrots, peeled and shredded
1 c. buttermilk
1/4 c. light mayonnaise
1/4 c. lowfat sour cream
3 scallions, sliced thin (I left them out)
3 T. minced fresh parsley
2 tsp. cider vinegar
1 tsp. Dijon mustard
1/2 tsp. honey

Directions:
Toss the cabbage with 1 teaspoon salt in a colander and let sit until wilted, about 1 hour.  Rinse the cabbage under cold water, drain, and pat dry thoroughly with paper towels.  Toss the dried cabbage and carrots together in a large bowl to combine.

Whisk the buttermilk, mayonnaise, sour cream, scallions, parsley, vinegar, mustard, honey, 1/4 teaspoon salt and 1/4 teaspoon pepper together in a bowl until smooth.  Pour the dressing over the cabbage mixture and toss to coat.  Cover and refrigerate until the flavors have blended, about 1 hour.

Mediterranean Chopped Salad

New favorite salad! Sorry... forgot the photo!

Ingredients:
2 c. cherry tomatoes (about 12 ounces), stemmed and quartered
1 cucumber (about 8 ounces), peeled, halved lengthwise, seeded, and cut into 1/2-inch pieces
Salt and pepper
3 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
1 garlic clove, minced
1 (15-ounce) can chickpeas, rinsed
1/3 c. pitted kalamata olives, chopped (we didn't use)
1/4 c. minced red onion
1 romaine lettuce heart (about 6 ounces), cut into 1/2-inch pieces
3/4 c. crumbled feta cheese
1/2 c. chopped fresh parsley

Directions:
1. Toss the tomatoes, cucumber, and 1/2 teaspoon salt together in a colander and let drain for 15 to 30 minutes.

2. Whisk the oil, vinegar, and garlic together in a large bowl until well combined.  Add the drained tomatoes and cucumber, chickpeas, olives, and onion and toss to combine.  Let sit at room temperature until the flavors blend, about 5 minutes.

3.  Add the lettuce, feta, and parsley and toss to combine.  Season with salt and pepper to taste.

Wheat Pita Bread

I thought for sure I had already posted this, but I can't find the post anywhere, so here it is again!


Ingredients:
  • 1 1/8 cups warm water (110 degrees F/45 degrees C)
  • 1 1/2 c. all-purpose flour
  • 1 1/2 c. whole-wheat flour
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 1/2 teaspoons white sugar
  • 1 1/2 teaspoons active dry yeast

Directions

  1. Stir together water and yeast in the bowl of a kitchenaid mixer fitted with a dough hook.  Let stand for 5 minutes, or until yeast is dissolved and foamy.
  2. Stir in remaining ingredients.  Turn mixer to medium speed and knead for 10 minutes.  Transfer to a greased glass bowl and let rise until doubled, about 1 1/2 hours.  
  3. Turn dough onto a lightly floured surface. Gently roll and stretch dough into a 12 inch rope. With a sharp knife, divide dough into 8 pieces. Roll each into a smooth ball. With a rolling pin, roll each ball into a 6 to 7 inch circle. Set aside on a lightly floured countertop. cover with a towel. Let pitas rise about 30 minutes until slightly puffy.
  4. Preheat oven to 500 degrees F (260 degrees C). Place 2 or 3 pitas on a wire cake rack. Place cake rack directly on oven rack. Bake pitas 4 to 5 minutes until puffed and tops begin to brown. Remove from oven and immediately place pitas in a sealed brown paper bag or cover them with a damp kitchen towel until soft. Once pitas a softened, either cut in half or split top edge for half or whole pitas. They can be stored in a plastic bag in the refrigerator for several days or in the freezer for 1 or 2 months.
